I have to admit, I don't like cupcakes. Maybe it's the texture of the frosting, maybe it's because I had such high expectations when I went to Magnolia's after fantasizing I'll be the Israeli Carrie Bradshaw, and the disappointment when finally tasting it
The thing is I just don't
But when I saw these amazing maple benedict cupcakes by The Cupcake Project everything changed, you see, I'm crazy about eggs Benedict and this is a genius idea
The first time I made a poached egg it was a disaster, the sauce was perfect but the egg was a disaster
It was a huge problem since I was hired as the breakfast sous chef in my favorite restaurant so I had to find a way to do it
Lucky for me the chef was patient and he really wanted me for this job. He brought an expert to teach me but it didn't work, I tried everything, I dreamed about eggs every night for two weeks until I finally got it right
And once I did there was no going back, if a client wanted something else for breakfast I would come out of the kitchen and convince them to change the order
My favorite part was seeing someone's face the first time they eat it, this wow! expression when the perfect bite is in their mouth
One client once said there's something so decadent about this dish that it reminds her of Studio 54 in the seventies
And that's what this cupcake is, the highest level of decadence…let them eat cupcakes
Digging into Stef's blog I found even more cupcakes I would love to try, the "out of the box" thinking and exploring of new tastes, like the peach pie with brie cheese is really what I love about cooking and her story is also great: Stef never made a cupcake in her life until she volunteered to make them for a friend's wedding
She had nine months to prepare and made tons of cupcakes and this is how this project was born
I love projects that are born this way, not through a five year plan or a start up dream, but from just rolling with life and letting it surprise you
